Signing on a phone
Most people sign on the device the email arrived on, which is usually a phone. The signing view is built for that width first rather than shrunk to fit it, and a signature can be typed or drawn with a finger.
They can change their mind about how their signature looks right up until the agreement completes.
When somebody cannot sign
They can decline, with a reason, and everybody on the agreement sees it. Nothing is left hanging and nothing has to be chased to find out what happened.
